
How To Make The Famous Canopy Rose Sweet and Jazzy Dressing
Hardly a day went by without someone asking for the recipe for the Canopy Rose Catering Sweet and Jazzy Dressing. "It's a proprietary secret." I taught my staff to say. At Canopy Rose Catering in Tallahassee, Florida we served this dressing as our house dressing. It was also the secret ingredient in hundreds, if not thousands of recipes during my tenure as a Florida-based special event designer and caterer. Since I have long closed the company, in order to pursue other creative endeavors, I am delighted to share some of the popular recipes that tickled the palates of our wonderful clients. This recipe was legendary in Florida's capitol city, South Georgia and among the Florida Coastal beach communities we would often serve. When you make this, be sure to take the time to stir it a lot! Initially it might not look right to you. But have faith! One very conscientious lady that worked with me in the early years was crying in the kitchen one morning. "What's wrong?" I asked her. "I messed up the dressing," she sobbed. "It is ok." I said "You just didn't stir it enough." A few minutes later the lovely smile returned to her face when the dressing ingredients combined together in a glorious sparkling ruby red. Canopy Rose Sweet and Jazzy Dressing 4 cups canola oil 3 cups ketchup 2 tablespoons Worcestershire Sauce 2 cups freshly chopped onion 4 cups sugar Lots of black pepper salt and seasoning salt, to taste Shake or stir WELL! Keep refrigerated. Sweet and Jazzy is great on salads, added to salsas, incorporated in barbecue sauces, served as a dipping sauce and baked in lip-smacking good vintage cuisine pork and chicken dishes.
